TECHNOLOGY

To produce our high-quality, crispy products we employ a combination of different drying methods. At the core stands our microwave vacuum drying process.

First, the pre-cut or uncut raw material is processed in a hot air dryer with a strong airflow and moderate drying temperature to reduce the materialís water content to 30 to 40 percent until a barrier layer has formed on the surface. Next, the material is placed in a vacuum and heated by microwaves to produce steam pressure inside the material. Contrary to conventional drying processes, this method dries the material from the inside out.

By carefully tuning the energy supply to the amount of material to be dried and the highest permissible product temperature, we produce a crispy, homogeneously porous product with a shape close to the original form of the raw material.
